I am researching prospective places to teach in China and am very attracted to the idea of working in the more southern provinces on the country. I was wondering if anyone is currently teaching English in the following provinces (or have done so in the past) or neighbouring areas. Please do tell us what your experiences were like, how's the schools, weather, local cuisine like etc, and how close were you to the coast. I am particularly interested in anyone who can provide information on teaching in Xiamen, of the Fujian province in general.

Have a look at Nanning, Guangxi Province; also known as 'the green city'. Plenty of work available at the Uni's and a great lifestyle available for those who are willing to 'mix' with the locals.

The coastal areas are about 3-4hrs away by bus. I personally wouldn't want to work in these areas as most are a bit touristy and seem a lot less friendly than inland. Also they tend to be much more expensive for entertainment and food!

Checkout the internet info on Nanning and surrounding areas, include Guilin, a great little city but 5 hrs away for me ... haha.
