I have yet to go to China, but you may want to try your post at ESLCafe.com. I've read some comments on "rural" China and that it can be quite boring and difficult to find desirable western comforts. Not to say these are necessary all the time, but if you're anything like me, you like the option. :)

As far as learning the language goes, I've heard Harbin might be the place to do it. The people there speak mandarin in its purest form which would probably be the most adaptable to the rest of China sans-Cantonese speaking locations.
