In regards to jobs, your chances of finding a job before going is very very slim. Most jobs are either a scam or schools that will not support you to get a work visa, although I have heard of some very lucky people getting them by teaching English.
It sounds scary, but the best option, at least for Brazil is to bite the bullet and try your luck! I'm sure you will be wanted in big places like Rio, São Paulo, Brasilia and even smaller places like Belo Horizonte. Half is luck, the other is convincing them that you will be better to hire than a Brazilian with good English.
Hope that makes your decision making easier and if you have more questions, don't hesitate to ask! :)
